If water and oil do not mix, then how is the salad sandwich hero, mayonnaise, a success story? Year 11 Food Technology were back at it again last week, exploring this question in their functional properties of food prac.

Beef burgers with homemade aioli was a delicious revision of previously discussed properties such coagulation and the Maillard reaction, whilst introducing the property of emulsification in the preparation of the much loved garlicky condiment! The epic burgers were a welcome treat on Harmony week mufti day.
